April 2017 - Papa John’s, the nation’s third best-selling pizza chain, is introducing organic pizza toppings and gluten-free crusts in select test markets, it announced earlier this week.

The organic options—Roma tomatoes, mushrooms, green peppers, and onions—are currently only available in the Lexington, Kentucky market, while the gluten-free crusts are being tested in Los Angeles, Phoenix, St. Louis, and Nashville. (And the chain notes the gluten-free crusts may not be suitable for customers with Celiac disease as cross-contamination with wheat can occur.)

According to the chain, the move toward organic is intended to align Papa John’s with changing consumer values.

“We just think this is a trend that is going to be out there, and we want to be the first in our industry to have organic produce on our menu,” chief ingredients officer Sean Muldoon told Fortune.

Popovi Bee Farm is a small family farm that produces organic honey and bee products. It was founded by Grozdan Popov, who started dealing with bees in 1996 as a hobby. In 2004, with several other beekeepers in Bulgaria, they were the first certified beekeepers from Balkanbiosert. After 18 years of hard work, we own 250 hives, from which we produce Acacia, Manov and Polyfloral honey, bee pollen and propolis. Our apiaries are situated/located in two ecologically clean areas, so within a radius of 3 km from the site of the apiaries, the sources of nectar and pollen are mainly organically grown crops and natural vegetation. This contributes to the produced honey and bee products meeting the strict requirements for bio-certified products with exceptional purity. The certificate for organic bee products is valid for the European Union, United Arab Emirates, USA, Canada, England, Japan, Switzerland, etc. Recently, we have an online store where you can buy organic honey and biological bee products directly from us, the producers, at the most affordable prices.

Our bee farm has certificates for organic bee products from the controlling body Balkanbiosert, which is the first national body for control and certification of organic production. It works with well-trained and highly qualified staff and offers quality and affordable services to organic farmers, processors and traders. "Balkan Biocert" is a product of international cooperation aimed at meeting the needs of Bulgarian biological operators.

We are a new organic certified farming operation. At present, we have a crop of organic wheat growing. Should harvest the crop in July and have it sold to a bakery and a craft brewery. We will be producing other crops for the craft brewery including blueberries, blackberries and mayhaws. We are getting our website up soon.

Black Shank, or “jarret noir” in French, was the name given to Beaucerons in the 19th century. Located on the south shore of Quebec City, the Beauce region produces most of the Quebec maple syrup. To get to the ferry from the St-Lawrence river leading to Quebec City, the Beaucerons had to cross muddy black earth fields and were then easily recognizable in the city, hence their nickname “black shank”. Our brand Black Shank is therefore a tribute to these builders.
